SPECIAL EDITION: Potato Cheddar-Cheese Soup

OK - so this is from the "Fix-It and Forget-It Lightly" cookbook and it was AWESOME.  For those Catholics out there, you don't have to have cheese pizza, mac n' cheese and fish every Friday!  Here's a fun alternative for those Fridays in Lent coming up! :)

POTATO CHEDDAR-CHEESE SOUP

Ingredients:
~ 6-10 potatoes, peeled and cubed (I used 9)
~ 1/2 cup fat-free, low-sodium vegetable broth
~ 1 cup water
~ 1 large onion, finely chopped (we didn't do this in our house :) we're "anti-onion" we did onion powder instead)
~ 1/2 tsp garlic powder (we used more - like 1 tsp)
~ 1/8 tsp white pepper (we used more - like 1/4 tsp)
~ 2 cups fat-free milk, heated
~ 1 cup shredded fat-free sharp, or extra sharp, cheddar cheese
~ paprika

1. Place potatoes, broth, water, onions and garlic powder in slow cooker.
2.  Cover. Cook on low 7-9 hours or on high 4-6 hours.
3.  Mash potatoes, leaving them a bit lumpy.  Stir in pepper and milk a little at a time.  Add cheese.  Cook until cheese has melted, about 5 minutes.  Add more milk if you'd like a thinner or creamier soup.
4.  Garnish each serving with paprika.

Makes 4 LARGE servings :)  (about 2 cup servings)

Per 2 cup serving = 6 Weight Watchers Points
Per 1 cup serving = 3 WW Points
